Our pulled chicken empanada is a traditional Peruvian dish that we turned into an empanada! The dish is called Aji de gallina and is a spicy Peruvian chicken dish with the yellow chili Ají Amarillo. The chicken is marinated in chili, a bit of milk, delicious turmeric, and added some potatoes. It is sustainable Chicken farming, and we are happy to be a part of The Happy Chicken Project.

At LIMA Empanadas we make our empanadas from scratch and stuff them with all different kinds of filling. There are a lot of variations in our empanadas, we have the ones with meat, veggie ones, vegan, organic, and sweet empanadas. We love developing new kinds in our kitchen in Skanderborg. Empanadas come from Latin America and are easy to eat, it’s easy finger food. We love to play with the different concepts of empanadas. The ones we have with beef and chicken are the most popular and traditional. But we also have empanadas with inspiration from Greece (feta/spinach). And then we are very happy to make organic empanadas and take a little bit extra care of the environment and all of us. We always look for new inspiration for our empanadas, so everyone is happy!
